- 1 large red bell pepper – cut into 1-inch pieces
- 1 large orange bell pepper – cut into 1-inch pieces
- 1 red onion – peeled and cut into 1-inch pieces
- 1 medium zucchini – cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- 1 package chicken sausage (12 oz) – robust Italian flavor
Instructions
- Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss to coat evenly.
- In a smaller bowl, mix together the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Pour the spice blend over the veggies and toss until well-coated.
- Slice the chicken sausage into 3/4 inch rounds and add to the bowl with the veggies. Toss everything together until combined.
- Preheat the air fryer to 390 degrees F if needed, and spray the air fryer basket with cooking spray.
- Add the veggie and sausage mixture to the air fryer basket in a single layer and close it. Cook for 10 minutes, flipping halfway through.
- Once cooked, carefully remove the chicken sausage and veggies from the air fryer. Serve as is or with cooked cauliflower rice or brown rice.
