3-Layer Banana Pudding

Ingredients

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 box vanilla wafers
  • 4 ripe bananas

Instructions

  1. Whisk together the sugar, cornstarch, and a pinch of salt in a saucepan. Gradually add the milk and cook over medium heat, stirring constantly until thickened.
  2. Remove from heat and stir in the vanilla extract.
  3. Layer vanilla wafers, sliced bananas, and the pudding mixture in a serving dish. Repeat the layers twice more, finishing with the pudding.
  4. Whip the heavy cream to stiff peaks and spread over the top layer.
  5. Refrigerate for at least 240 minutes before serving.

Notes

Use ripe bananas for the best flavor. You can make the pudding mixture a day ahead and assemble just before serving.
