Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, add the cherry tomatoes and spinach.
  3. Crumble the feta cheese over the tomatoes and spinach.
  4. Create wells in the mixture and crack an egg into each well.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Bake in the oven for 15-20 minutes, or until the eggs are set to your liking.
  7. Garnish with fresh herbs if desired and serve warm.
