- 4 large eggs
- 200g feta cheese
- 1 cup cherry tomatoes
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, add the cherry tomatoes and spinach.
- Crumble the feta cheese over the tomatoes and spinach.
- Create wells in the mixture and crack an egg into each well.
- Drizzle with olive oil and season with salt and pepper.
- Bake in the oven for 15-20 minutes, or until the eggs are set to your liking.
- Garnish with fresh herbs if desired and serve warm.
Notes
Serve warm, great with crusty bread or a fresh salad. Leftovers can be stored in an airtight container for 2-3 days.
