- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs, 1/2 cup sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan.
- Beat cream cheese in a large mixing bowl until smooth. Add 1 cup sugar and vanilla; mix well.
- Add eggs, one at a time, mixing on low speed until just blended.
- Mix in sour cream and flour until smooth.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 1 hour or until the center is set (it may still have a slight jiggle).
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
To store, cover tightly with plastic wrap or aluminum foil and keep in the refrigerator for up to one week. Can be frozen for longer storage.
