- 8 ounces pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/2 red onion, finely chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine the pasta, cherry tomatoes, cucumber, black olives, feta cheese, and red onion.
- Drizzle Italian dressing over the pasta salad and toss gently to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh basil or parsley if desired and serve cold.
Notes
This pasta salad is perfect for meal prep, keeping well in the fridge for up to 3 days. Add a drizzle of dressing before serving if it seems dry.
