Blueberry Cheesecake

Ingredients

  • 1 ½ cups crushed cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed cookie crumbs and melted butter until combined. Press into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat together cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gently fold in blueberries and lemon juice.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for about 50-60 minutes, or until the center is set.
  8. Let cool, then chill in the refrigerator for at least 4 hours before serving.

Notes

Serve chilled and topped with fresh blueberries, whipped cream, or blueberry sauce. Store in the refrigerator for 3-4 days or freeze for up to 2 months.
