- 1 ½ cups crushed cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix crushed cookie crumbs and melted butter until combined. Press into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat together cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Gently fold in blueberries and lemon juice.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for about 50-60 minutes, or until the center is set.
- Let cool, then chill in the refrigerator for at least 4 hours before serving.
Notes
Serve chilled and topped with fresh blueberries, whipped cream, or blueberry sauce. Store in the refrigerator for 3-4 days or freeze for up to 2 months.
