- 1 cup rolled oats
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- Mix oats, flour, brown sugar, and melted butter until crumbly. Press half of the mixture into the bottom of the baking dish.
- Beat the cream cheese, sugar, egg, and vanilla until smooth. Fold in the blueberries. Pour the mixture over the crust.
- Sprinkle the remaining oat mixture on top.
- Bake for 25-30 minutes until golden brown.
- Cool before cutting into bars.
Notes
Best served cold or at room temperature. Can add whipped cream or vanilla ice cream on top.
