- 1 package of puff pastry sheets (thawed)
- 1 cup fresh blueberries
- 1/4 cup sugar
- 1 teaspoon lemon juice
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry sheets on a floured surface. Cut them into rings using a cookie cutter or cup.
- Place the rings on a baking sheet lined with parchment paper.
- Mix the blueberries, sugar, and lemon juice in a bowl. Place a spoonful of the blueberry mixture in the center of each pastry ring.
- Beat the egg and brush it on the edges of the pastry rings.
- Bake in the oven for 15-20 minutes or until golden brown.
- Whip the heavy cream in a mixing bowl. Add powdered sugar and vanilla extract. Continue to whip until it forms stiff peaks.
- Fill the cooled rings with the vanilla cream filling.
Notes
Store any leftover rings in an airtight container in the refrigerator. Best eaten within a couple of days.
