Blueberry Pastry Rings with Vanilla Cream Filling

Ingredients

  • 1 package of puff pastry sheets (thawed)
  • 1 cup fresh blueberries
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheets on a floured surface. Cut them into rings using a cookie cutter or cup.
  3. Place the rings on a baking sheet lined with parchment paper.
  4. Mix the blueberries, sugar, and lemon juice in a bowl. Place a spoonful of the blueberry mixture in the center of each pastry ring.
  5. Beat the egg and brush it on the edges of the pastry rings.
  6. Bake in the oven for 15-20 minutes or until golden brown.
  7. Whip the heavy cream in a mixing bowl. Add powdered sugar and vanilla extract. Continue to whip until it forms stiff peaks.
  8. Fill the cooled rings with the vanilla cream filling.

Notes

Store any leftover rings in an airtight container in the refrigerator. Best eaten within a couple of days.
