- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- Combine the blueberries, honey, and lemon juice in a small saucepan over medium heat. Simmer for about 5 minutes until the blueberries soften.
- Dissolve cornstarch in a little water and stir it into the blueberry mixture to thicken (if using). Remove from heat and let it cool completely.
- Mix the Greek yogurt and vanilla extract in a bowl until smooth. Adjust sweetness by adding more honey or maple syrup if desired.
- Spoon the yogurt into silicone molds or mini muffin tins, filling them about three-quarters full.
- Add a spoonful of the cooled blueberry compote on top of each yogurt portion. Use a toothpick to swirl it gently for a marbled effect.
- Freeze the molds for at least 180 minutes until the bites are solid.
- Remove the bites from the molds and store them in an airtight container in the freezer. Let them sit for 2-3 minutes before eating for the best texture.
Notes
For the best flavor, use fresh blueberries. Adjust sweetness based on your taste. Let yogurt bites sit at room temperature for improved texture before serving.
