Instructions
- Combine the shredded cabbage, grated carrots, and diced red bell pepper in a large bowl.
- Whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper in a separate bowl.
- Pour the dressing over the cabbage mixture and toss until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish optionally with chopped cilantro or parsley before serving.
Notes
For extra crunch, add chopped nuts like almonds or walnuts. Substitute mayonnaise with yogurt for a lighter version.
