Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream the butter and sugar in a separate bowl until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Scoop small amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely.
- Fill half of the cookies with pastry cream.
- Top the other half with chocolate ganache and sandwich them together.
- Dust with powdered sugar if desired. Serve and enjoy!

Store cookies in an airtight container in the refrigerator for 3-5 days or freeze them for up to 2-3 months. You can add flavors like coffee or almond extract to the dough for an extra twist.
