Caramel Apple Cheesecake Bars

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press this mixture into the bottom of the dish to form a crust.
  3. Beat the softened cream cheese and sugar together in a large mixing bowl until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, cinnamon, and nutmeg.
  4. Fold in the diced apples gently into the cream cheese mixture.
  5. Pour the cream cheese mixture over the graham cracker crust and smooth it out.
  6. Drizzle the caramel sauce over the top.
  7. Bake for 30-35 minutes or until the center is set.
  8. Allow it to cool, then refrigerate for at least 2 hours before cutting into bars.
  9. Serve chilled and drizzle with additional caramel before serving.

Notes

Best served chilled, can include a scoop of vanilla ice cream or whipped cream for extra indulgence.
