Ingredients

- 1 cup medjool dates (pits removed)
- 1/3 cup shredded carrots
- 1 cup walnuts
- 1 tbsp chia seeds
- 1/3 cup shredded unsweetened coconut
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1 tsp vanilla extract
- Extra 1/2 cup shredded coconut for rolling
Instructions
- Add all the ingredients to a food processor and pulse until combined.
- Scoop out some dough using a spoon and roll it into balls.
- Roll each ball into the shredded coconut to coat.
- Place in the fridge to firm up for at least one hour.
Notes
Store in an airtight container in the fridge for up to one week, or freeze for longer storage.
