Cheesy Hamburger Potato Soup

Ingredients

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened, about 3-4 minutes.
  2. Add ground beef, cooking until browned. Drain excess grease.
  3. Stir in potatoes and chicken broth. Bring to boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
  4. Pour in milk and cream, stirring to combine. Heat through without boiling.
  5. Gradually add cheddar cheese, stirring until melted and smooth.
  6. Season with salt and pepper. Simmer for an additional 5-10 minutes.
  7. Ladle into bowls and serve hot; garnish as desired.

Notes

For a thicker soup, blend a portion and mix it back in. Add other vegetables like carrots or celery for extra nutrition.
