- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened, about 3-4 minutes.
- Add ground beef, cooking until browned. Drain excess grease.
- Stir in potatoes and chicken broth. Bring to boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
- Pour in milk and cream, stirring to combine. Heat through without boiling.
- Gradually add cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper. Simmer for an additional 5-10 minutes.
- Ladle into bowls and serve hot; garnish as desired.
Notes
For a thicker soup, blend a portion and mix it back in. Add other vegetables like carrots or celery for extra nutrition.
