- 2 cups heavy cream
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup amaretto liqueur
- 1 cup fresh cherries, pitted and chopped
- 1 cup coffee, cooled
- 1 package ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a large bowl, whip the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until soft peaks form.
- In another bowl, combine the amaretto liqueur and coffee.
- Quickly dip each ladyfinger into the coffee mixture and layer them in a serving dish.
- Spread half of the cream mixture over the ladyfingers, followed by half of the chopped cherries.
- Repeat the layers with the remaining ladyfingers, cream mixture, and cherries.
- Cover and refrigerate for at least 240 minutes or overnight.
- Before serving, dust the top with cocoa powder.
Notes
For added flavor, infuse the cream with a little almond extract. Store leftovers tightly covered in the refrigerator for up to three days.
