Cherry Amaretto Tiramisu

Ingredients

  • 2 cups heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup amaretto liqueur
  • 1 cup fresh cherries, pitted and chopped
  • 1 cup coffee, cooled
  • 1 package ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a large bowl, whip the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until soft peaks form.
  2. In another bowl, combine the amaretto liqueur and coffee.
  3. Quickly dip each ladyfinger into the coffee mixture and layer them in a serving dish.
  4. Spread half of the cream mixture over the ladyfingers, followed by half of the chopped cherries.
  5. Repeat the layers with the remaining ladyfingers, cream mixture, and cherries.
  6. Cover and refrigerate for at least 240 minutes or overnight.
  7. Before serving, dust the top with cocoa powder.

Notes

For added flavor, infuse the cream with a little almond extract. Store leftovers tightly covered in the refrigerator for up to three days.
