Chicken Avocado Melt Sandwich

Instructions

  1. In a bowl, mix the shredded chicken with the mashed avocado and mayonnaise if using. Season with salt and pepper.
  2. Spread the chicken and avocado mixture evenly on two slices of bread.
  3. Top with cheese slices and cover with the remaining bread slices.
  4. Heat a skillet over medium heat and add butter.
  5. Grill the sandwiches on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.
  6. Serve warm.

Notes
