- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 4 slices of cheese (cheddar or mozzarella)
- 4 slices of bread (your choice)
- 1 tablespoon mayonnaise (optional)
- Salt and pepper to taste
- Butter for grilling
Instructions
- In a bowl, mix the shredded chicken with the mashed avocado and mayonnaise if using. Season with salt and pepper.
- Spread the chicken and avocado mixture evenly on two slices of bread.
- Top with cheese slices and cover with the remaining bread slices.
- Heat a skillet over medium heat and add butter.
- Grill the sandwiches on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve warm.
Notes
Use fresh bread for the best taste and texture. Don’t skip the butter for grilling for a nice golden color and flavor. Feel free to add other toppings like tomatoes or lettuce.
