Chicken Avocado Ranch Burritos

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 medium avocados
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle olive oil over the chicken breasts and rub it evenly on both sides.
  3. Sprinkle garlic powder, onion powder, paprika, ground cumin, salt, and black pepper onto the chicken.
  4. Massage the seasoning into the chicken.
  5. Place the chicken on a lined baking sheet and bake for 20-25 minutes, until it reaches 165°F (74°C).
  6. While the chicken is baking, prepare the avocado mix: slice avocados and mash with lime juice.
  7. In another bowl, mix ranch dressing and sour cream until smooth.
  8. Once the chicken is done, shred it into bite-sized pieces.
  9. Warm tortillas in the microwave or skillet.
  10. Spread ranch-sour cream mixture on each tortilla.
  11. Layer with shredded chicken, mashed avocado, cheeses, lettuce, tomatoes, and cilantro.
  12. Fold in the sides and roll it tightly to form a burrito.
  13. Optional: crisp the burritos in a skillet over medium heat.
  14. Serve warm, optionally with extra ranch dressing.

Notes

For added flavor, marinate chicken in olive oil and spices for an hour before baking. Use fresh ingredients for the best taste.
