- 1 large egg
- 1 cup of milk (whole, 1%, 2%, skim, almond, etc.)
- 2 Tbsp of unsalted butter (melted)
- 1 cup of all-purpose flour
- 1/4 cup of white granulated sugar
- 1/3 cup of unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt (reduce to 1/4 tsp if using salted butter)
- Strawberries, raspberries, blueberries, and powdered sugar for serving
Instructions
- In a large bowl, mix together the egg, milk, melted butter, and granulated sugar.
- Using a sieve or sifter, sift the flour, salt, baking soda, and cocoa powder into the bowl with the mixture.
- Combine gently with a spatula or mixer, being careful not to overmix.
- Preheat a skillet or griddle to 350°F (176°C).
- Spray the hot pan with cooking spray, then pour out some batter onto the surface.
- Allow the first side to cook for 2 to 3 minutes until edges look dull and bubbles form.
- Cook the other side for about 1 to 1.5 minutes until set and slightly browned.
- Serve with fresh fruit and powdered sugar. Enjoy!
Notes
Don’t overmix the batter to keep the pancakes fluffy. Experiment with toppings like nuts or chocolate chips.
