- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- Mix the rolled oats, flour, baking soda, and salt in another bowl.
- Add the dry ingredients to the wet mixture until just combined.
- Fold in the blueberries, being careful not to crush them.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
