  • 34 medium or large bananas
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 cup flour (for crumb topping)
  • 1 cup brown sugar (for crumb topping)
  • 6 Tbsp cold butter (for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
  2. In a small bowl, mash the bananas with brown sugar, vanilla extract, and ground cinnamon.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs to the butter mixture and beat until well combined.
  5. Sift the flour, baking soda, and salt into the wet ingredients and stir until just combined.
  6. Add sour cream to the mixture and stir well.
  7. Pour in the mashed bananas and mix until everything is combined.
  8. In a separate bowl, combine 1 cup of flour, 1 cup of brown sugar, and 6 tablespoons of cold butter. Use a fork to mix until crumbly.
  9. Sprinkle the crumb topping over the banana bread batter in the pans.
  10. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Notes

Make sure bananas are very ripe for the best flavor. You can add nuts or chocolate chips for added taste and texture.
