- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup sour cream
- 1 can (10.5 oz) cream of mushroom soup
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess fat.
- Stir in garlic, corn, black beans, diced tomatoes, sour cream, cream of mushroom soup, chili powder, salt, and black pepper. Mix well and cook for 2 minutes.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle 1 cup of shredded cheddar cheese over the mixture.
- Arrange tater tots in a single layer on top.
- Bake for 35-40 minutes until tater tots are golden and crispy.
- Remove from oven, sprinkle the remaining cheese on top, and bake for another 5 minutes until melted.
- Garnish with fresh parsley and serve hot.
