Classic Cowboy Casserole Recipe

This Cowboy Casserole is a comforting, cheesy, and flavor-packed dish loaded with ground beef, beans, and crispy tater tots perfect for a hearty meal!

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess fat.
  • Stir in garlic, corn, black beans, diced tomatoes, sour cream, cream of mushroom soup, chili powder, salt, and black pepper. Mix well and cook for 2 minutes.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Sprinkle 1 cup of shredded cheddar cheese over the mixture.
  • Arrange tater tots in a single layer on top.
  • Bake for 35-40 minutes until tater tots are golden and crispy.
  • Remove from oven, sprinkle the remaining cheese on top, and bake for another 5 minutes until melted.
  • Garnish with fresh parsley and serve hot.
