Ingredients

Instructions

  1. Cook the gnocchi according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer. Stir in the crumbled feta cheese until melted and combined.
  5. Add the cooked gnocchi to the skillet and gently stir to combine. Season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of cream or milk.
