- 1 package gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the gnocchi according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted.
- Pour in the heavy cream and bring to a simmer. Stir in the crumbled feta cheese until melted and combined.
- Add the cooked gnocchi to the skillet and gently stir to combine. Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of cream or milk.
