Creamy Mushroom Chicken

An easy and delicious meal combining tender chicken breasts, rich cream, savory mushrooms, and fresh spinach, all cooked quickly in one skillet.

Ingredients

  • 4 chicken breasts
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the chicken breasts and cook until browned on both sides. Remove and set aside.
  3. In the same skillet, add onions and garlic, and sauté until softened.
  4. Add the mushrooms and cook until they release their moisture.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in the heavy cream and spinach, and season with salt and pepper.
  7. Return the chicken to the skillet and simmer until cooked through.
  8. Garnish with fresh parsley and serve.

Notes

You can use different kinds of mushrooms for varied flavor. For a lighter version, substitute half-and-half or milk for the heavy cream.
