Ingredients

- 4 chicken breasts
- 2 cups mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup spinach
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chicken breasts and cook until browned on both sides. Remove and set aside.
- In the same skillet, add onions and garlic, and sauté until softened.
- Add the mushrooms and cook until they release their moisture.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and spinach, and season with salt and pepper.
- Return the chicken to the skillet and simmer until cooked through.
- Garnish with fresh parsley and serve.
Notes
You can use different kinds of mushrooms for varied flavor. For a lighter version, substitute half-and-half or milk for the heavy cream.
