Crispy Ground Beef Tacos

Quick and tasty crispy tacos filled with rich ground beef and melted cheese. Perfect for any occasion!

Ingredients

  • 1 pound 90/10 ground beef
  • 1/2 medium onion, finely chopped
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 1/4 cup water or beef broth
  • Salt to taste
  • 8 (6 inch) taco size flour tortillas
  • 2 to 3 cups mozzarella cheese, shredded
  • Avocado or vegetable oil
  • Fresh cilantro, finely chopped (for garnish)

Instructions

  1. Heat about 1 tablespoon of oil in a large skillet over medium heat. Add the chopped onions and cook until softened, about 2-3 minutes.
  2. Add the ground beef to the skillet. Use a large spoon to break up the beef and cook until it’s mostly browned, around 4-5 minutes.
  3. Mix in the tomato paste and then add the taco seasoning. Stir in the water or beef broth if the filling looks dry. Continue to cook until the beef is fully cooked and most of the liquid has evaporated, around 3-4 minutes.
  4. Remove from heat and let it cool slightly before assembling tacos.
  5. Place one tortilla down on a clean work surface. On the top half, add about 1 1/2 to 2 tablespoons of mozzarella cheese. Spoon some beef filling over the cheese and top with another 1 1/2 to 2 tablespoons of cheese. Fold the bottom half of the tortilla over the filling and gently press down to seal.
  6. Transfer the assembled taco to a large baking sheet and repeat the process with the remaining ingredients to make a total of 8 tacos.
  7. Heat about 3-4 tablespoons of oil in a large skillet over medium heat. In batches, pan-fry the tacos for about 1 minute on each side, or until golden brown.
  8. Transfer them to a wire cooling rack over a baking sheet. Add a little more oil in between frying batches if needed.
  9. Garnish tacos with fresh cilantro if desired, and serve immediately while still hot and crispy.

Notes

For extra crunch, you can use corn tortillas instead of flour. Make sure not to overfill the tacos. Experiment with different toppings and sauces.
