- 1 pound 90/10 ground beef
- 1/2 medium onion, finely chopped
- 2 tablespoons taco seasoning
- 2 tablespoons tomato paste
- 1/4 cup water or beef broth, as needed
- Salt to taste, as needed
- 8 (6 inch) taco size flour tortillas
- 2 to 3 cups mozzarella cheese, shredded
- Avocado or vegetable oil
- Fresh cilantro, finely chopped (for garnish)
Instructions
- Heat about 1 tablespoon of oil in a large skillet over medium heat. Add the chopped onions and cook until soft, about 2-3 minutes.
- Add the ground beef, breaking it up, and cook until mostly browned, about 4-5 minutes.
- Mix in the tomato paste and taco seasoning. Add water or beef broth as needed. Cook until fully cooked and liquids are mostly gone, about 3-4 minutes. Season with salt and set aside.
- On a clean surface, place a tortilla. Add 1 1/2 to 2 tablespoons of mozzarella cheese on the top half. Spoon beef filling over the cheese, then add another 1 1/2 to 2 tablespoons of cheese on top. Fold the bottom half over the filling and gently press to seal.
- Transfer tacos to a baking sheet and repeat with remaining ingredients.
- Heat about 3-4 tablespoons of oil in a large skillet. Fry tacos in batches for 1 minute on each side or until golden brown. Place on a wire rack to cool.
- Garnish with cilantro and serve hot.

For extra flavor, add your favorite toppings like salsa, guacamole, or sour cream.
