- 1 lb chicken breast
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups chicken broth
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the diced tomatoes, chicken broth, garlic, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the slow cooker.
- Stir in the heavy cream and Parmesan cheese, and cook for an additional 30 minutes on low.
- Serve hot, garnished with fresh basil.
Notes
For extra flavor, consider browning the chicken breasts before adding them to the slow cooker. You can also adjust the soup thickness by adding more or less chicken broth.
