- 1 pound lean chicken breast
- 1 cup low-sodium chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 2 cloves minced garlic
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Place the chicken breast in the bottom of the crockpot.
- Pour the chicken broth over the chicken.
- Add the diced tomatoes, bell peppers, onions, garlic, cumin, paprika, salt, and pepper.
- Stir all the ingredients together gently.
- Cover the crockpot and set it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Once cooked, shred the chicken with two forks and stir everything well.
- Taste and adjust seasoning if necessary.
Notes
For extra flavor, add herbs like basil or parsley during the last hour of cooking. For a spicier dish, include jalapeños or red pepper flakes.
