Crockpot Meal for Diabetics

Ingredients

  • 1 pound lean chicken breast
  • 1 cup low-sodium chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 2 cloves minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in the bottom of the crockpot.
  2. Pour the chicken broth over the chicken.
  3. Add the diced tomatoes, bell peppers, onions, garlic, cumin, paprika, salt, and pepper.
  4. Stir all the ingredients together gently.
  5. Cover the crockpot and set it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  6. Once cooked, shred the chicken with two forks and stir everything well.
  7. Taste and adjust seasoning if necessary.

Notes

For extra flavor, add herbs like basil or parsley during the last hour of cooking. For a spicier dish, include jalapeños or red pepper flakes.
