- 2 ribeye steaks (about 1 inch thick)
- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (like rosemary or thyme) for garnish (optional)
Instructions
- Start by heating your cast iron skillet over medium-high heat.
- Season the steaks generously with salt and pepper.
- Add 1 tablespoon of olive oil to the skillet when it’s hot. Place the steaks in the skillet and cook for about 4-5 minutes on each side for medium-rare.
- Remove the steaks from the skillet and let them rest on a plate.
- Add the remaining olive oil and the diced potatoes to the skillet. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden and crispy.
- Add the butter and minced garlic to the potatoes. Cook for another 2-3 minutes until the garlic is fragrant.
- Place the steaks back in the skillet with the potatoes for a final warm-up. Garnish with fresh herbs if using.
- Serve hot and enjoy your delicious meal!
Notes
Let the steaks sit at room temperature for 30 minutes before cooking for even cooking. Avoid overcrowding the skillet with potatoes.
