- 2 cups (240g) all-purpose flour, spooned and leveled
- 1/2 cup (40g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 & 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 cup (200g) packed brown sugar (light or dark)
- 2 large eggs
- 1 cup (240g) plain yogurt
- 1/3 cup (80mL) milk
- 1/2 cup (120mL) vegetable oil
- 1 teaspoon pure vanilla extract
- 1 cup (170g) chocolate chips or chocolate chunks
Instructions
- Prepare a muffin tin with paper liners and set it aside.
- In a medium bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk together and set aside.
- In a large bowl, mix brown sugar, eggs, yogurt, milk, oil, and vanilla. Whisk until well combined.
- Pour the dry ingredients into the wet ingredients and mix until just combined. Add chocolate chips or chunks and mix gently to distribute them evenly. Be careful not to overmix!
- Fill each muffin cup to the very top for an extra dramatic muffin top.
- Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, or until a skewer inserted into the center comes out clean of batter.
- Let the muffins cool in the pan for 10 minutes, then turn them out onto a wire rack to cool completely or until slightly warm.
Notes
For an extra treat, serve these muffins with a dollop of whipped cream on the side.
