Easter Pineapple Heaven Cake

Ingredients

  • 1 box yellow cake mix
  • 3 eggs
  • 1 cup water
  • 1 cup crushed pineapple (drained)
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 cup whipped cream
  • 1/2 cup crushed pineapple (for layering)
  • Optional: maraschino cherries or coconut flakes for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. Combine the yellow cake mix, eggs, and water in a mixing bowl. Mix until smooth.
  3. Pour the batter into the prepared cake pan and bake according to package instructions (usually 25-30 minutes).
  4. Let the cake cool completely on a wire rack.
  5. Beat together the cream cheese and powdered sugar in another bowl until smooth.
  6. Fold in the whipped cream gently until combined.
  7. Cut the cooled cake in half horizontally to create two layers.
  8. Spread a layer of cream cheese filling over one layer on a serving dish.
  9. Add a layer of crushed pineapple on top of the filling.
  10. Place the second layer of cake on top and repeat the filling and pineapple layers.
  11. Optionally, top the cake with maraschino cherries or coconut flakes.
  12. Refrigerate for at least 2 hours before serving.

Notes

Ensure to drain the crushed pineapple well and soften the cream cheese beforehand.
