- 1 box yellow cake mix
- 3 eggs
- 1 cup water
- 1 cup crushed pineapple (drained)
- 8 oz cream cheese (softened)
- 1 cup powdered sugar
- 1 cup whipped cream
- 1/2 cup crushed pineapple (for layering)
- Optional: maraschino cherries or coconut flakes for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- Combine the yellow cake mix, eggs, and water in a mixing bowl. Mix until smooth.
- Pour the batter into the prepared cake pan and bake according to package instructions (usually 25-30 minutes).
- Let the cake cool completely on a wire rack.
- Beat together the cream cheese and powdered sugar in another bowl until smooth.
- Fold in the whipped cream gently until combined.
- Cut the cooled cake in half horizontally to create two layers.
- Spread a layer of cream cheese filling over one layer on a serving dish.
- Add a layer of crushed pineapple on top of the filling.
- Place the second layer of cake on top and repeat the filling and pineapple layers.
- Optionally, top the cake with maraschino cherries or coconut flakes.
- Refrigerate for at least 2 hours before serving.
Notes
Ensure to drain the crushed pineapple well and soften the cream cheese beforehand.
