- 1 red onion, diced

Instructions
- In a large bowl, combine the cooked chicken, quinoa or rice, cucumber, tomatoes, and red onion.
- Drizzle with olive oil and season with salt and pepper, then toss to combine.
- Serve in bowls and top with feta cheese and tzatziki sauce.
- Garnish with fresh parsley. Enjoy!
