Ingredients

  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine rolled oats, Greek yogurt, eggs, honey, and vanilla extract until smooth.
  3. In another bowl, mix the dry ingredients: baking powder, baking soda, and salt.
  4. Gradually stir the dry mixture into the wet mixture until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes, then enjoy!

Notes

For added flavor, sprinkle a little cinnamon into the batter. Avoid overmixing to keep muffins tender.
