- 800 g Chicken Breast (cut into halves)
- 1.5 Cajun Seasoning Mix
- 2 Tsp Olive Oil
- 25 g Grass Fed Butter for Cooking
- 1 Medium Red Onion (chopped)
- 4–5 Garlic Cloves (chopped)
- 1/2 Cajun Seasoning Mix
- Fresh Parsley (for garnish)
- 15 g Grass Fed Butter
- 1/2 Cajun Seasoning Mix
- 250 ml Milk
- 150 g Light Cream Cheese
- 40 g Parmesan
Instructions
- Marinate chicken with Cajun Seasoning Mix and olive oil overnight.
- Heat a pan and melt butter, then cook the marinated chicken until golden.
- Let chicken rest, then slice into strips.
- Sauté red onion and garlic in the same pan, adding the remaining Cajun Seasoning Mix.
- Stir in day-old rice until coated with flavors.
- Lower heat, melt butter, whisk in milk, add light cream cheese and Parmesan until smooth.
- Layer Cajun rice on a plate, top with sliced chicken, and drizzle creamy sauce.
- Garnish with fresh parsley.
Notes
For more flavor, consider adding bell peppers or tomatoes. Use a thermometer to ensure chicken reaches 75°C (165°F).
