High Protein Creamy Cajun Chicken & Rice

A delightful blend of juicy chicken and creamy Cajun sauce over rice, packed with protein and flavor.

  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 Cajun Seasoning Mix
  • 2 Tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 1/2 Cajun Seasoning Mix
  • Fresh Parsley (for garnish)
  • 15 g Grass Fed Butter
  • 1/2 Cajun Seasoning Mix
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan

Instructions

  1. Marinate chicken with Cajun Seasoning Mix and olive oil overnight.
  2. Heat a pan and melt butter, then cook the marinated chicken until golden.
  3. Let chicken rest, then slice into strips.
  4. Sauté red onion and garlic in the same pan, adding the remaining Cajun Seasoning Mix.
  5. Stir in day-old rice until coated with flavors.
  6. Lower heat, melt butter, whisk in milk, add light cream cheese and Parmesan until smooth.
  7. Layer Cajun rice on a plate, top with sliced chicken, and drizzle creamy sauce.
  8. Garnish with fresh parsley.

Notes

For more flavor, consider adding bell peppers or tomatoes. Use a thermometer to ensure chicken reaches 75°C (165°F).
