Ingredients

- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mix the melted butter with the mashed bananas.
- Stir in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract.
- Mix in the flour until just incorporated.
- In a small bowl, mix cinnamon and brown sugar.
- Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon mixture, then add the remaining batter and top with the remaining cinnamon mixture.
- Use a knife to swirl the cinnamon mixture through the batter.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool before slicing.
Notes
Make sure your bananas are ripe for the best flavor. Don’t overmix the batter to keep the bread soft and moist.
