- 2 cups cooked pasta
- 1 cup sweet corn (fresh, canned, or frozen)
- 1 red bell pepper, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup feta cheese, crumbled
- 1 avocado, diced
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, sweet corn, diced red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat.
- Gently fold in the feta cheese and avocado.
- Serve chilled or at room temperature.
Notes
Cook pasta al dente and consider grilling the corn for enhanced flavor. Add avocado just before serving to prevent browning.
