- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- Beat together the softened cream cheese and butter until smooth.
- Add the sugar, egg, lemon juice, and lemon zest. Mix until well combined.
- Mix the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the cream cheese mixture. Stir until just combined.
- Fold in the blueberries gently.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden around the edges.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm or at room temperature. Great with milk or tea. Can be dusted with powdered sugar for an elegant touch.
