Lemon Blueberry Cookies

  • 2 tbsp lemon juice
  • 1 tbsp lemon zest (zest of 1 lemon)
  • ½ cup granulated sugar (100g)
  • 1 pinch citric acid (optional)
  • 1 cup unsalted butter (225g, room temperature)
  • ¾ cup powdered sugar (150g)
  • 1 large egg (divided)
  • ½ tsp vanilla extract
  • ½ tsp kosher salt
  • 1 ½ tbsp lemon juice
  • 1 tbsp lemon zest (zest of 1 lemon)
  • 3 ⅓ cups all-purpose flour (420g, sifted)

Instructions

  1. Start by making a blueberry reduction. In a small saucepan, combine the blueberries, 2 tablespoons of lemon juice, and a pinch of citric acid (if using). Cook over medium heat until the blueberries break down and the mixture thickens slightly. Let it cool.
  2. Cream together the unsalted butter and granulated sugar in a large bowl until light and fluffy. Add the powdered sugar and mix well. Beat in half of the egg, vanilla extract, and the 1 ½ tablespoons of lemon juice along with 1 tablespoon of lemon zest.
  3. Gradually stir in the sifted all-purpose flour and kosher salt until just combined. Fold in the cooled blueberry reduction gently to create a swirled effect.
  4. Chill the cookie dough in the refrigerator for about 30 minutes. Preheat your oven to 350°F (175°C). Using a cookie scoop or spoon, drop dough onto a parchment-lined baking sheet, leaving space between each cookie.
  5. Bake the cookies in the preheated oven for about 12-15 minutes until they are lightly golden around the edges. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve with tea or coffee. Drizzle with lemon icing or serve with vanilla ice cream for an extra treat.
