- 1 1/2 cups all-purpose flour

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1/2 tsp vanilla extract
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream together the softened butter and granulated sugar until light and fluffy in a large bowl.
- Beat in the egg, fresh lemon juice, lemon zest, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Chill the dough for at least 30 minutes to help with shaping.
- Roll the dough into balls and then roll them in powdered sugar until well-coated.
- Place on a lined baking sheet and bake for 10-12 minutes or until the edges are set.
- Allow to cool for a few minutes before transferring the cookies to a wire rack to cool completely.

Store in an airtight container at room temperature for up to one week or freeze for up to three months, layered with parchment paper.
