Ingredients

  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy in a large bowl.
  4. Beat in the egg, fresh lemon juice, lemon zest, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Chill the dough for at least 30 minutes to help with shaping.
  7. Roll the dough into balls and then roll them in powdered sugar until well-coated.
  8. Place on a lined baking sheet and bake for 10-12 minutes or until the edges are set.
  9. Allow to cool for a few minutes before transferring the cookies to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week or freeze for up to three months, layered with parchment paper.
