Ingredients

Instructions

  1. Combine rolled oats, almond butter, maple syrup, lemon juice, lemon zest, poppy seeds, salt, and vanilla extract in a mixing bowl.
  2. Stir until well mixed.
  3. Use your hands to form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator.
