- 1 cup powdered sugar (for glaze)
- 5 teaspoons lemon juice (for glaze)
- Drops of vanilla (optional, for glaze)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and sugar together until combined.
- Add the egg, vanilla, lemon juice, and lemon zest to the bowl, and mix well.
- Stir in the flour, baking powder, salt, and baking soda until everything is combined.
- Use a 1 tablespoon cookie scoop to create cookie dough balls, placing them about 1.5 inches apart on the prepared baking sheet.
- Bake for 7 minutes.
- Remove from the oven and let the cookies cool on the baking sheet for 10 minutes before transferring them to a cooling rack.
- While the cookies cool, make the glaze by mixing the lemon juice with powdered sugar, adding drops of vanilla if desired.
- Blend well until smooth, adjusting with extra lemon juice or water for desired consistency.
- Drizzle the glaze over the cookies and let them cool completely.
Notes
For chewier cookies, avoid overbaking. They can be stored in an airtight container for up to a week.
