- 2 medium zucchinis
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 large eggs
Instructions
- Begin by preheating your air fryer to 400°F (200°C).
- Wash and trim the ends of the zucchinis. Cut them into sticks, about 1/4 inch wide.
- In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each zucchini stick first into the egg, coating well, then roll it in the breadcrumb mixture until fully covered.
- Place the coated zucchini fries in a single layer in the air fryer basket. If needed, cook in batches.
- Air fry for about 10-12 minutes, flipping halfway through, until golden and crispy.
- Remove and let them cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place them back in the air fryer for a few minutes.
