Low Calorie Air Fryer Zucchini Fries

Crispy and healthier air fryer zucchini fries that make a great snack or side dish.

Ingredients

  • 2 medium zucchinis
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs

Instructions

  1. Begin by preheating your air fryer to 400°F (200°C).
  2. Wash and trim the ends of the zucchinis. Cut them into sticks, about 1/4 inch wide.
  3. In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Dip each zucchini stick first into the egg, coating well, then roll it in the breadcrumb mixture until fully covered.
  5. Place the coated zucchini fries in a single layer in the air fryer basket. If needed, cook in batches.
  6. Air fry for about 10-12 minutes, flipping halfway through, until golden and crispy.
  7. Remove and let them cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place them back in the air fryer for a few minutes.
