- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach
- Salt and pepper to taste
- Fresh basil for garnish (optional)
- Pasta or rice for serving
Instructions
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream; bring to a simmer. Stir in Italian seasoning, sun-dried tomatoes, and spinach. Let it cook for a few minutes until the spinach wilts.
- Return the chicken to the skillet and coat it in the creamy sauce.
- Serve over cooked pasta or rice and garnish with fresh basil if desired.
Notes
Use fresh ingredients for the best flavor and adjust seasonings to taste. Can substitute with shrimp or tofu for different variations.
