Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup sour cream
  • 12 mini graham cracker crusts

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Beat the cream cheese until smooth.
  3. Add sugar and vanilla, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream until fully incorporated.
  6. Pour the batter into mini graham cracker crusts, filling them about 3/4 full.
  7. Bake for 15-20 minutes, until set but jiggly.
  8. Let cool before refrigerating for at least 2 hours.
  9. Serve chilled, optionally with fruit toppings.

Notes

Make sure the cream cheese is well softened to avoid lumps in the batter. Don’t overmix the eggs to prevent an airy texture.
