- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1/2 cup sour cream
- 12 mini graham cracker crusts
Instructions
- Preheat the oven to 325°F (160°C).
- Beat the cream cheese until smooth.
- Add sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream until fully incorporated.
- Pour the batter into mini graham cracker crusts, filling them about 3/4 full.
- Bake for 15-20 minutes, until set but jiggly.
- Let cool before refrigerating for at least 2 hours.
- Serve chilled, optionally with fruit toppings.
Notes
Make sure the cream cheese is well softened to avoid lumps in the batter. Don’t overmix the eggs to prevent an airy texture.
