Instructions
- In a large bowl, mix together the oats, protein powder, nut butter, honey, chocolate chips, mint extract, and salt until well combined.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a baking sheet or plate and refrigerate for at least 30 minutes to help them firm up.
- Enjoy immediately or store in an airtight container in the fridge for up to one week.
Notes
Use creamy nut butter for a smoother texture and adjust mint extract to taste.
