Orange Creamsicle Cake

Ingredients

  • 1 1/2 cups granulated sugar

  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 3 1/2 teaspoons baking powder

  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh orange slices for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs, orange juice, and orange zest, mixing well.
  4. Combine flour, baking powder, and salt in a separate bowl. Gradually add this to the wet mixture until fully combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
  8. Beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form for the frosting.
  9. Once the cakes are completely cooled, spread frosting between the layers and on top of the cake.
  10. Decorate with fresh orange slices and serve.

Notes

Use fresh orange juice for the best flavor. Don’t overmix the batter to prevent density.
