Pizza Eggs

Pizza Eggs is a fun and tasty way to enjoy breakfast or brunch, combining pizza flavors with healthy eggs.

  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 3 eggs
  • 60 g reduced-fat cheese
  • 1 tbsp passata
  • A few slices of salami
  • Mixed herbs

Instructions

  1. Melt cheese: Start by spreading the cheese evenly across a non-stick pan. Allow it to melt and become slightly crispy.
  2. Whisk eggs: While the cheese is melting, crack the eggs into a bowl and whisk them until smooth.
  3. Pour the whisked eggs over the melted cheese in the pan. Cover with a lid and let it cook until the bottom is firm and golden.
  4. Carefully flip the egg and cheese base using a spatula.
  5. Spread the passata on top of the cooked side, add the salami slices, and sprinkle on the remaining cheese. Cover the pan again until the cheese melts and the toppings are heated through.
  6. Remove from the pan, sprinkle with mixed herbs, and enjoy immediately.

Notes

Use a non-stick pan to make flipping easier. Feel free to add other toppings like vegetables or different types of meats.
