Rolled Brioche with Vanilla Pastry Cream & Chocolate Chips

Ingredients

  • 500g flour
  • 75g sugar
  • 10g salt
  • 25g yeast
  • 250ml milk
  • 3 eggs
  • 125g butter (melted)
  • 300ml pastry cream (crème pâtissière)
  • 150g chocolate chips
  • Vanilla extract

Instructions

  1. In a bowl, mix flour, sugar, and salt.
  2. In a separate bowl, dissolve yeast in warm milk.
  3. Combine the yeast mixture with the dry ingredients, adding eggs and melted butter.
  4. Knead until smooth.
  5. Let the dough rise for 60 minutes.
  6. Roll out the dough and spread pastry cream over it, then sprinkle with chocolate chips.
  7. Roll the dough tightly into a log and slice it into pieces.
  8. Place the slices in a baking dish and let them rise again for 30 minutes.
  9. Bake at 180°C (350°F) for 25-30 minutes until golden brown.
  10. Allow to cool before serving.

Notes

Make sure your milk is warm but not too hot, as it may kill the yeast. Knead the dough well for smoothness, and don’t skip rising times for flavor development.
