Recreate the magic of Little Debbie’s Christmas Tree Cakes at home! Fluffy vanilla cake, sweet marshmallow filling, and a festive white chocolate coating!

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk

For the Filling:

  • ½ cup unsalted butter, softened
  • 1 cup marshmallow fluff
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (as needed)

For the Coating:

 

  • 2 cups white chocolate chips or white candy melts
  • 1 tbsp coconut oil or shortening
  • Red and green sprinkles
  • Red icing (for swirls)

Instructions

  • Make the Cake: Preheat oven to 350°F (175°C). Grease and line a baking sheet with parchment paper.

  • In a bowl, whisk flour, baking powder, and salt.

  • In another bowl, beat butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.

  • Gradually add dry ingredients, alternating with milk, until fully combined.

  • Pour batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until golden. Let cool completely.

  • Use a Christmas tree-shaped cookie cutter to cut out tree shapes.

  • Make the Filling: Beat butter, marshmallow fluff, powdered sugar, and vanilla until fluffy. Add milk if needed for a spreadable consistency.

  • Spread filling onto half of the cake trees, then top with remaining trees to create sandwiches.

  • Coat the Cakes: Melt white chocolate with coconut oil until smooth. Dip each cake, covering fully.

  • Place on a wire rack and sprinkle with red and green decorations. Pipe red icing swirls on top.

  • Let set at room temperature or refrigerate for faster setting.
