Ingredients

- 1 cup of rice
- 2 cups of chicken broth
- 1 pound of chicken breast, cut into pieces
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic. Sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot. Cook until they are browned on all sides.
- Stir in the chopped bell pepper and paprika. Cook for another 2 minutes.
- Add the rice to the pot, and stir for about a minute to coat the rice in the flavors.
- Pour in the chicken broth, and bring to a boil.
- Once boiling, reduce the heat to low. Cover the pot and let it simmer for 20 minutes, or until the rice is cooked and has absorbed the broth.
- Remove from heat and fluff the rice with a fork. Let it sit for 5 minutes before serving.
- Garnish with fresh parsley before serving.
Notes
This dish is best served warm and can be enjoyed on its own or with a side salad. Pair it with yogurt or sour cream for added creaminess.
