  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of red pepper flakes or cayenne powder
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for the cast iron preparation

Instructions

  1. Start by letting the steak reach room temperature. Pat it dry and season generously with salt, pepper, and minced garlic.
  2. Heat a cast iron skillet over high heat until it is smoking hot.
  3. Add avocado oil to the skillet, place your steak in, and listen for the sizzle!
  4. After flipping the steak, add European butter, minced garlic, and herbs to the skillet.
  5. Use a meat thermometer to check the steak’s temperature, aiming for medium-rare at 130°F.
  6. Let the steak rest for at least 5 minutes to allow the juices to redistribute.
  7. In a bowl, mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices.
  8. Slice the steak against the grain and top it with a dollop of the cowboy butter.
